Ingredients
    Apple Cake Loaf
  • 1/3 cup neutral oil
  • 1/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup chopped apples (I like a mix of Gala and Granny Smith)
  • 1/3 cup milk
  • 1 3/4 cup flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Cinnamon Cream Cheese Icing
  • 1/4 cup powdered sugar
  • 1/4 cup softened cream cheese
  • 1/2 teaspoon cinnamon
  • 2 tablespoons milk/cream

    Apple Spiced Loaf
  1. Preheat oven to 350° F. Grease a 9×5 inch loaf pan or line it with parchment paper, and set aside.
     
    Chop apples into small cubes and set aside. Make the streusel topping in a medium bowl by combining brown sugar, granulated sugar, flour, and cinnamon in a small bowl, then mash in the butter with a fork until combined. (If you're not using streusel, skip this step).
     
    In a large mixing bowl, mix together the oil and sugars together. Whisk in the eggs, milk/cream, and vanilla extract. Slowly pour the dry ingredients into the bowl of the wet ingredients and mix until just combined. Fold in the chopped apples.

    Once just combined, pour the prepared pan. Smooth the batter so it's even with the back of a spoon or spatula. If you'll be only icing the loaf, it is ready for the oven. If you will be adding streusel generously sprinkle all over the top.

    Bake for about 35-45 minutes, or until a toothpick inserted comes out clean. Take care not to overbake. Allow it to cool for 15 minutes in the pan before removing it to cool completely on a wire rack. Once cool add the icing.

  3. In a mixing bowl, add powdered sugar, cinnamon, cream cheese, and 1 tablespoon of milk/cream to a bowl and whisk until fully combined, adding more milk/cream if needed until desired consistency. Pour the glaze over the cooled loaf.
