Chai Cookies with Vanilla Glaze: Taylor Swift Inspired

Ingredients
    Chai Cookies
  • 2 1/2 cups flour
  • 1 1/2 cup cake flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons chai spice blend (divded)
  • 1 pinch black pepper
  • 2 teaspoons vanilla extract
  • 1 cup cold cubed butter
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 tablespoon granulated sugar for rolling
  • Chai Spice Blend
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1 1/2 teaspoon ground cardamom
  • 1/2 teaspoon allspice
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • Vanilla Glaze
  • 1 teaspoon vanilla extract
  • 1 1/2 cup icing sugar
  • 3 tablespoons milk/cream
  • 1/2 teaspoon cinnamon
Instructions
  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat. Set aside. Whisk together the ingredients for the chai spice blend in a small bowl. Take 1 tablespoon and add it to a large bowl with all the other dry ingredients. Add the extra 1 tablespoon of sugar to the small bowl of remaining chai spice. Set aside. 
  2. In the bowl of your stand mixer with the paddle attachment cream, the butter and sugars together for about 1-2 minutes.

    Add in the eggs, egg yolks, and vanilla extract mixing until combined.  Scrape down the sides before adding the dry ingredients. Mix until just incorporated

    Portion out your dough into 8 large balls. Roll the cookie dough balls in the chai spice mixture before placing them on the baking sheet with room to spread. 4 per pan works best.  Bake cookies for about 8-15 minutes. Depending on cookie size, Cool cookies completely before glazing. Usually, an hour is best so the centers have time to set.
  3. Vanilla Glaze
  4. Add icing sugar, cinnamon, milk, and vanilla extract to a bowl. Whisk until all of the sugar is incorporated. Add additional milk as needed to thin but the glaze should be on the thicker side. Spoon glaze over cookies. Allow the glaze to dry before enjoying.
