Ingredients
    Cookies and Cream Cookie
  • 1 cup softened butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups flour
  • 12 chopped oreos
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • Cookies and Cream Frosting
  • 1/2 cup softened butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 -3 tablespoon heavy cream
  • 10 chopped oreos
  • 2 pinches salt
  • 12 mini oreos
Instructions
    Cookies and Cream Cookies
  1. Preheat oven to 350°. In a stand mixer cream together the butter and sugar until light and fluffy. Scrape the sides, add in the eggs and vanilla extract. Beat until mixed.
     
    Scrape the sides and add in the flour and baking powder. Mix until combined.
     
    Add the chopped oreos and mix just long enough to mix in the cookies but not completely smash all of them. Honestly about 5 - 10 seconds. Any longer and your cookies may start to turn grey.
     
    Scoop out dough and roll into a ball. I do just under 1/2 cup and then flatten them with palm of your hand so it looks like a hockey puck. Arrange 6 cookies on parchment lined pans.
     
    Bake for 8-12 minutes or until the centers of the cookies have puffed up and are no longer glossy.
  2. Cookies and Cream Frosting
  3. Cream the butter until smooth. Slowly add in the powdered sugar, vanilla extract, and heavy cream until smooth and creamy. Add in the chopped Oreo and mix until the Oreo is mixed in. Again to much and it willl turn grey.

    Spread on the completely cool cookie and top with a mini Oreo right in the middle. Chill the cookies in the fridge until ready to serve. These cookies are best served chilled.
