Ingredients
    Oatmeal Cookies
  • 1/2 cup softened butter
  • 1/4 cup granulated sugar
  • 1/3 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 1/4 cup old fashioned rolled oats
  • 1 cup flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Vanilla Icing
  • 3/4 cups powdered sugar
  • 1/4 vanilla extract
  • 1 1/2 tablespoon milk/cream

    Oatmeal Cookies
  1. Preheat the oven to 350F. Prepare a cookie sheet with parchement paper and set it aside.

    in the bowl of your stand mixer with the paddle attachment. Cream the butter and sugars together until combined. Add in the egg and vanilla and mix until light and fluffy. Slowly mix in the dry ingredients making sure to scrape the sides before mixing again until the mixture is just combined.

    Using a large cookie scooper or by-eye portion out your dough into 8 equally-sized cookie dough balls. Place them on the prepared baking sheet, 4 at a time. Gently press down on the cookies with the palm of your hand to about 1 inch in thickness.

    Bake them in the preheated oven for 10 minutes. Make sure to not overbake them so they stay soft and gooey. Let the cookies cool down on the baking sheet for 20 minutes then move them to a cooling rack to cool down fully. Once fully cooled they can be iced or they are delicious as is.

  2. Vanilla Icing
  3. In a medium bowl, whisk the powdered sugar 1 tablespoon of milk, and the vanilla together until combined. Dip the top of the cooled-down cookies into the vanilla sugar glaze or spoon the glaze over the cookies then place them back on the cooling rack so it can set. Allow them to set fully before enjoying.
