Ingredients
Peanut Butter Reese's Pieces Cookies
1/2 cup softened butter
1/2 cup peanut butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1 1/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 tablespoon cornstarch
1/4 teaspoon salt
3/4 cups reese's pieces
Instructions
Peanut Butter Reese's Pieces Cookies
Preheat oven to 350°F and line baking sheets with parchment paper.
In the bowl of your stand mixer, cream together softened butter and the sugars. Beat until totally combined. Add peanut butter and vanilla extract and beat until combined. Add egg and beat until just combined.
Add dry ingredients and mix until combined. The dough will be soft and a bit sticky. Gently mix in the Reese's pieces so they don't smash up.
Scoop 1/3 cup of dough per cookie. Roll into a ball then flatten lightly with palm of your hand. Arrange 6 per tray. Add additional Reese's pieces to the top of the cookies.
Bake cookies one sheet at a time until the cookies are very lightly crackled on top and the edges are turning golden, about 12-14 minutes. Don’t overbake.
Cool on the cookie sheets for at least 20 minutes and then transfer to a cooling rack to cool completely. As they are soft cookies they need cooling time to firm up.
