Ingredients
    Sour Patch Kids Cookies
  • 1 cup softened butter
  • 3/4 cups granulated sugar
  • 3/4 cups brown sugar
  • 1 large egg
  • 1 teaspoon lime extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 3 cups flour
  • 1/2 cup diced sour patch kids
  • 1 cup raspberry jam
  • Lime Frosting
  • 4 ounces softened cream cheese
  • 4 ounces softened butter
  • 3 cups powdered sugar
  • 1 teaspoon lime extract
  • 2 tablespoons milk or heavy cream
  • 12 sour patch kids

    Sour Patch Kids Cookies
  1. Preheat oven to 350°. Prepare cookie sheets with parchment paper. In your stand mixer, cream together the butter and sugars until light and fluffy. Scrape the sides before adding in the egg, and extract. Beat until mixed. Scrape the sides and add the dry ingredients. Add the diced sour patch kids mixing until thoroughly combined.

  2. Scoop out just shy of 1/2 cup each and roll it into a ball. Repeat with the remaining dough. Taking one ball at a time, press a deep cavity with a spoon or tablespoon. Fill the cavity with roughly 1 tablespoon of jam. Then carefully seal the jam in with the cookie by pinching and rolling the dough back into a ball. Repeat for all 12 cookies. Assemble 6 per tray, baking for 9 -12 minutes or until the cookies start to crack. Allow them to cool on the cookie sheet.

  3. Lime Frosting
  4. In your stand mixer, cream the cream cheese and butter until smooth. Slowly add in the powdered sugar, and lime extract. Thin with milk or cream until smooth and spreadable. Spread on cooled then garnish with sour patch kid candy. Chill them in the fridge until ready to serve. These cookies are best served chilled.
