Ingredients
    Pecan Cookies
  • 1 cup softened butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chopped pecans (I usually skip the nuts)
  • Maple Buttercream
  • 1 cup softened butter
  • 3 cups powdered sugar
  • 3 tablespoons maple syrup
  • 1/3 cup heavy cream
  • 1 cup chopped pecans
Instructions
    Pecan Cookies
  1. Preheat oven to 350º. Prepare 2 baking sheets with parchment paper. In your stand mixer beat butter and sugars until smooth. Add vanilla and eggs and beat until combined, then add flour, baking soda, and salt and mix until just combined. Fold in chopped pecans and chill dough for 20 to 30 minutes.

    Scoop balls of dough onto prepared baking sheets and bake until golden, 10 to 12 minutes. Let cool completely.

  3. In your stand mixer, beat butter until smooth and fluffy, 2 minutes. Add powdered sugar and beat until combined, then add maple syrup and heavy cream and beat until creamy.  Frost cookies and decorate with pecans.
