Shamrock Shake McFlurry Cookies

Ingredients
    Vanilla Mint Sugar Cookies
  • 1 cup softened butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons JRC Candy Cane extract (or 1 1/2 vanilla and 1/2 mint extract)
  • 3 cups flour
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 drops green food colouring to desired colour
  • Vanilla Frosting and Topping
  • 1/2 cup softened butter
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon milk/cream (1 -3 TBS)
  • green food colouring
  • 1/2 cup crushed oreos
Instructions
    Sugar Cookies
  1. Preheat oven to 350°. Prepare cookie sheets with parchment paper. In your stand mixer, cream together the butter and sugar until light and fluffy. Scrape the sides before adding in the eggs and extracts. Beat until mixed. Scrape the sides and add the dry ingredients. Mix until thoroughly combined.

  2. Scoop out just shy of 1/2 cup each and roll it into a ball. Repeat with the remaining dough. Assemble 6 per tray then flatten the cookie dough by gently pressing with the palm of your hand to resemble a hockey puck.

    Bake for 9-12 minutes or until the centers of the cookies have puffed up, and are no longer wet. Allow them to cool on the cookie sheet.

  3. Vanilla Frosting
  4. In your stand mixer, cream the butter until smooth. Slowly add in the powdered sugar and extract. Thin with milk/cream until desired thickness. Spread on cooled cookies.
