Eye on You – Chocolate Chip Cookies

Ingredients
    Chocolate Chip Stuffed Cookies
  • 2 1/2 cups flour
  • 1 1/2 cup cake flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup cold cubed butter
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 4 cups semi-sweet chocolate chips
  • 12 gummy eyeballs
Instructions
  1. Preheat oven to 400°F.  Place cubed butter into the bowl of a stand mixer and secure the paddle attachment. Turn the mixer on a medium-low setting. Cream the butter for 30 seconds, and then add in the sugar. Cream until light and fluffy, then add in the eggs and vanilla, mixing until combined. Scrape the sides and slowly add in the dry ingredients. Add it in a little at a time until the ingredients are incorporated. Then add in the chocolate chips and mix just until the chocolate chips are incorporated. 
  2. Portion out your dough just over 5oz per cookie. 12, 5.7 oz. cookies. Place cookies on a cookie sheet lined with parchment paper.
     
    Bake cookies for 10-12 minutes or until the tops are golden brown. The secret is to pull them out before you think they are done. Using a tablespoon make a divet in the center and add in your gummy eyeball.  Let rest on the cookie sheet for at least 30 minutes to an hour.  Giant cookies need time to rest.
