Best Ever: Frosted Pumpkin Cookies

Preheat oven to 350 degrees. Prepare cookie sheets with parchment paper. In the bowl of your stand mixer cream together butter and granulated sugar. Add wet ingredients and beat until combined. Scrape bowl and then add dry ingredients, mix until just combined.
Portion your dough out with preferred cookie scoop size. Arrange cookie dough 3 inches apart on cookie sheets. Bake for 10 to 12 minutes or until the tops are set. Transfer to wire racks to cool.
Vanilla Frosting

Cream together butter and brown sugar. Mix in milk/cream and vanilla. Beat in powdered sugar until smooth. Add more milk/cream if needed until desired consistency. Spread frosting on cookies. Sprinkle with pumpkin pie spice if desired.
