Ingredients

Peanut Butter Cookie

Chocolate Frosting

Instructions

Peanut Butter Cookies

  1. Preheat the oven to 350F then line a baking sheet with parchment paper or silicone mat before setting it aside.
  2. Cream the butter, peanut butter, and sugars together. Add in the eggs and vanilla extract then mix until combined. Add in the flour, oats, baking powder/soda, corn starch, and salt. Mix just until the flour mixture disappears. Take care not to overmix.
  3. Using a large cookie scooper, scoop out 6 to 12 equally sized cookie dough balls.  I like to gently flatten them with the palm of my hand so they don't spread as much in the oven. Bake in the preheated oven for 11-13 minutes.

  4. After baking let them cool down on the baking sheet for about 20 minutes before transferring them to a cooling rack.

Chocolate Frosting

  1. Cream the butter, cream cheese, and vanilla extract together until smooth. Add in the icing sugar slowly until combined.
  2. Add in the cocoa powder, then add in 2 tablespoons milk and mix again until fluffy. Add additional milk if needed.
  3. Once cooled, frost each cookie with a thick layer of frosting then chill for at least 30 minutes before enjoying.
